Hey you! Yes, you, the one already packing away the summer wardrobe and breaking out the Thanksgiving decorations. Chill out. Since August 1st, everyone seems to be surrendering the rest of their summer to prepare for the pending autumn. Well, I’m not buying it. The day I place my daughter on the school bus (for the first time ever *gulp*) I will accept that another summer has come and gone. Until then, I’ll continue grilling exotic fruits and soaking in the summertime sunshine. Squeeze every ounce of fun out of this juicy season, February comes all-too quickly.
(Grilled) Pineapple Express
Makes about 4 side portions
Ingredients:
1 whole fresh pineapple*
3 tablespoons local honey
1 tablespoon freshly-squeezed orange juice
1/2 teaspoon freshly-ground black pepper
* Smell the pineapple when purchasing. You should pick up a sweet flavor. The stronger the smell, the riper the fruit. Turn the pineapple upside down in an empty container for a few hours before you grill it to distribute the sugar throughout the fruit.
Preparation:
Trim, core, and peel pineapple. Cut into quarters from top to bottom. Slice out the core from each quarter. Cut each quarter slice into four pieces (two pieces lengthwise and two crosswise). You should now have 12 wedges of pineapple.
