
Walnuts offer extremely high-quality antioxidants, dates and raisins are rich in dietary fiber, topped on the uncompromisable apple; what's not to love??

I had added an almond meal and coconut oil crust to the pictured apple crumble but I don't recommend. It offered very little to the texture and flavour and was very difficult to handle in slices.
My goal for this apple season is to make something for everyone to enjoy. This one goes out to a few of my nearest and dearest friends: my raw and vegan peeps. For those who don’t practice a restricted diet, I still highly recommend trying this naturally delicious, extremely low-fat, nutrient-rich alternative to the classic apple pie. If you don’t love it raw, place in the oven for 30 minutes at 375°f and it’ll be just like Grandma’s window sill once again.
Raw Apple Crumble
Inspired by a recipe seen on food.com and the love of a fresh, raw apple.
Serves 8 to 10
Ingredients:
- 8 apples, peeled and chopped fine (I use a mixture of Macintosh and Honey Crisp)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons fresh lemon juice
- 2 cups walnuts
- 1 cup raisins
- 1 cup pitted dates
- 1 teaspoon cinnamon
- 1/8 teaspoon salt
Peel and thinly slice each apple lengthwise (almost like prepare potato chips). I used my handy mandoline slicer for this. Place the apple slices in a bowl, pour lemon juice over and sprinkle with 1 tsp cinnamon and nutmeg. Toss until each slice is covered in spice. Pour into a tart or pie pan.
For crumble: in a food processor, pulse walnuts, raisins, dates, 1 tsp cinnamon and salt until coarsely ground. Do not over mix. Crumble the mixture over the apples with your hands and press lightly. I always love preparing a raw dessert since you can serve immediately once all of the elements are put together, no waiting for the ding of an oven or a boiling pot. Enjoy. xo
